對米其林餐廳懷有幻想的我總覺得三星餐廳的廚房應該是個大型開放式空間，無論動線或是採光都應該有型甚至時尚。巴黎三星餐廳LEDOYEN主廚Christian Le Squer邀我逛他的廚房，爬下幽暗的階梯、推開一個個厚重的大門、擠過窄窄的通道，彷彿走進秘密組織的基地，需要密碼才能呼喚出讓人驚豔的菜餚。　曾經來台灣客座的Christian Le Squer打響高雄餐廳的米其林風潮，看他窩居在幽暗的地下室
